The Puddery has largely been a "one-woman show," according to owner Janel Prator, who said in a social media post this week that her Houston-area dessert shop historically has not had enough customers or generated enough revenue to warrant additional staff. Prator would bring in her daughter on busy days or weekends, she said, to help serve guests in the four-table shop or to assist with shipping orders.

Things have recently changed dramatically for the Pearland business, which during the last 10 days or so has had lines extending out the front door and wrapping around the side of its building in a strip center at 5517 Broadway St. Prator has struggled to keep pace and said she's temporarily suspending shipping orders.

She's also hiring, and it's all because of one man and a rave review that went viral.

Citing the "Keith Lee effect," a reference to the popular TikTok food critic who visited The Puddery on Nov. 28 and gave a flattering review, a grateful and seemingly exhausted Prator said Wednesday that she was closing the shop until Saturday. She made the announcement in an Instagram video filmed outside of an urgent care clinic, where Prator said in a subsequent video that she was diagnosed with a strained muscle in her chest because it had been overworked while mixing and preparing pudding and other treats.

"Usually I would just thug it out and work through it," Prator said in one of the videos. "But because of all the influx of all the customers we have, I really feel like I need to stop for a second and make sure I'm OK. Because the weekend is coming, and I want to make sure that I'm on point for all the customers that we have coming this weekend."

Lee, who has millions of followers on Instagram and TikTok, recently reviewed several Houston-area restaurants during a tour of the region. He also reviewed Butter Funk Kitchen, Cool Runnings Jamaican Bar & Grill, Mezza Grille, Stick Talk, The Better Box, The Breakfast Klub and The Waffle Bus.

Lee was especially complimentary of The Puddery, which specializes in banana pudding and a dessert called the Oreo Croffle, which features a cross between a croissant and a waffle. He described the latter treat as "immaculate" and said the overall offerings at The Puddery are "absolutely insane," giving the business a 9 rating on a 10-point scale.

The review received millions of views, and within hours after it was posted, lines began to form outside The Puddery.

"I'm still in shock. I'm literally in shock," Prator said in one of her Wednesday videos. "Even when Keith Lee posted the review, I was still in denial like, ‘I don't know if y'all are really going to come.' ... When that line formed, I was like, ‘Oh, crap. It's happening.' "

Because of the sudden spike in demand, Prator said she is reevaluating her processes and exploring the possibility of securing a larger operating space in addition to seeking out more employees. She also is pausing shipping orders, likely until January, she said.

It's all in the interest of ensuring her longstanding customers as well as new ones will experience the same level of quality and service that prompted Lee to visit the business in the first place, according to Prator.

"First of all, I want to say thank you. This has been crazy," Prator said. "When (Lee) posted that review, my business has not been the same at all. It has been a total, complete whirlwind."

Early voting in Texas begins Oct. 23, meaning voters within Friendswood ISD and Pearland ISD can begin heading to the polls to vote on a pair of voter-approval tax rate elections, or VATREs, for their respective districts.

For Friendswood ISD, the district is seeking a tax rate of $1.08 per $100 valuation of a home, according to district documents. If approved, it would add about $1.2 million to the district’s budget and lessen an expected shortfall of $3.65 million in the district’s fiscal year 2023-24 budget.

Pearland ISD, meanwhile, is facing a $12.7 million shortfall and is looking at a VATRE to provide an additional $11.2 million in revenue, according to district documents.

Residents in both districts can expect a decrease in their tax bill compared to last year regardless of the outcome, according to district documents. This is due to a recent state bill, Senate Bill 2, which compressed tax rates across Texas.

There are no city council elections going for either Friendswood or Pearland.

On Aug. 30, Pearland officials initiated Stage 2 of the city’s Drought Contingency Plan in response to ongoing challenges caused by insufficient rainfall and extreme temperatures, according to a news release.

The mandatory water restrictions were given almost three weeks after the city initiated voluntary water restrictions earlier this month.

Cities like Pearland enact water restrictions when the water demand gets too high relative to the city’s water reserves, Director of Utilities David Sohns said before adding that the city has sufficient capacity but officials want to conserve water reserves for essential services like firefighting.

A new Pearland charter school teaching kindergarten through eighth grade is accepting student applications as it prepares to welcome more than 1,416 children next school year.

The International Leadership of Texas’ $42 million campus recently resumed construction after lengthy supply chain delays and is on track to open August 2024 in Brazoria, a county with fewer than 10 charter schools as of March, the Chronicle reports.

As public-school enrollment drops in Houston, the topic of charters continues fueling debate at local and state levels. Critics say they take resources from public schools while proponents laud their value as an alternative for at-risk and disadvantaged students.

"We never view ourselves in competition with ISDs," said Alexandra Crutcher, ILTexas' public relations manager. "We're simply another option for parents to educate their kids. We're not better or worse. We're just different. If a child has aspirations to go into international affairs, or become trilingual by the time they graduate, then we would be a good fit for that student."

What's the difference between an ISD and charter school?

Charter schools are funded through the state, charitable donations and grants. Unlike ISDs, they don't receive additional funding from local taxes. Charter schools generally receive $500-1,000 less per student from the state than a traditional public school, according to the Texas Public Charter Schools Association.

Charter schools are not required to have an armed security guard, per House Bill 3 that went into effect in September. However, ILTexas will have an armed security guard at its Pearland location for safety, said superintendent and chief executive officer Eddie Conger.

TEXAS LAW: New Texas law requires more transparency from charter schools after Hearst report on self-dealing

State law doesn't require charter schools to enter employment contracts with employees. The school's board makes this decision and sets their own salaries, according to the Texas Education Agency.

The TEA also requires teachers at public charter schools to have a bachelor's degree unless they are a special education, bilingual or English as a Second Language teacher. However, the governing body of a charter school is allowed to set qualifications for teachers at a standard above what the state law requires.

Teachers at ILTexas schools are not required to be certified by the state but may receive additional training and have opportunities to become certified through programs provided by the schools if they choose to do so, according to Laura Carrasco, deputy superintendent of academics and student services.

School boards at charter schools are not elected because the school doesn't have access to local taxes like independent school districts. The public can attend the school board meetings online and in-person, similar to ISDs.

How does ILTexas' trilingual education system work?

Students in all grade levels receive academic instruction in English, Spanish and Mandarin Chinese through a 50/50 dual language program. Two teachers work together to alternate languages every other day and pick up on the curriculum where the other stops the previous days.

"It takes 5-7 years to become fluent in any language," Conger said.

Students are placed in language classes based on their experience level. For example, middle schoolers who have no experience in Spanish or Mandarin will start at the beginner level and work their way up, according to Carrasco.

"We know that Mandarin Chinese is the language that is going to support our students to be global leaders," said principal Ebony James

Will there be transportation provided by ILTexas in Pearland?

ILTexas Pearland does not provide transportation to and from school. The school may work with an on-site after school and before school program that would monitor students prior to and following their school days.

Parents will have to pay a fee to use the service that is expected to be available 6:30 a.m. to 6:30 p.m. to support parents, James said.

Transportation will be provided to the ILTexas Windmill Lakes-Orem High School in Houston from the Pearland K-8 campus for students who decide to continue their education with ILTexas.

How do families apply for ILTexas in Pearland?

The school is accepting applications for the 2024-25 school year, and the application review process will begin in February based on a first-come, first-served lottery system.

Students who are accepted may continue to the ILTexas Windmill Lakes-Orem High School, 9901 Windmill Lakes Blvd. in Houston without having to reapply.

What are the requirements to enroll in ILTexas in Pearland?

Prospective students must be 5 years old on or before Sept. 1 and reside within the school's geographical boundaries, which may be found through the ILTexas application website.
